Brisket cook teaches class how to prepare a smoked brisket Published April 23, 2014 By Senior Airman Joshua Edwards 17th Training Wing Public Affairs GOODFELLOW AIR FORCE BASE, Texas -- John M. Farris, Goodfellow Recreation Camp manager, taught a free brisket smoking class to service members and Goodfellow civil servants at the rec. camp here April 19. The rec. camp hosted the class to boost morale and encourage people to use the rec. camp facilities. Everyone who attended learned a step-by-step instruction on how to cook a brisket. "I'm teaching the proper way to cook a brisket," said Farris. "You want to use a lot of salt because it helps break the meat down. The key to a good brisket is mesquite wood and smoke." Halfway through the smoking process, Farris provided the class with a brisket he started cooking the night before. "The brisket has a smoky flavor," said Lori A. Keller, 17th Force Support Squadron Non-Appropriated Funds Accounting financial manager. "We used some raspberry vinaigrette, so it is sweet and tangy. The brisket was so tender that it just crumbles." Once the meat finished cooking, Farris cut everyone's brisket for them and allowed them to take whatever they had cooked home. "It was a great day, and the brisket was very easy to make," said Keller. "I think everyone at the base needs to come out and try this."
